Vinification:
The grapes, harvested by hand, are de-stemmed, crushed and conveyed to a stainless steel winemaker where, to allow the extraction of all the aromatic molecules, alcoholic fermentation takes place at a controlled temperature of 25/27 ° C for about 20 days. Then we proceed with the racking to separate the solid fraction from the liquid. The flower wine ends the fermentation in stainless steel tanks, while the berries are softly pressed. The product obtained is combined, in percentages established by the oenologist, with the flower wine
Refinement:
At the end of fermentation, the wine is decanted into French oak tonneaux in which the malolactic fermentation takes place and, after 12 months, it is decanted into stainless steel tanks in which it remains for 6 months
